Enter Pinterest. Where I find all of my crazy new inspirations.Pinterest directed me to a blog called Kirbie's Cravings. There are tons of mug cake recipes there, but the peanut butter one intrigued me.
I love the idea of mug cake. So fast, so easy. So tasty. But it was missing something....
I know! Nutella! It makes everything better.
Here's what you'll need:
4 tablespoons flour
4 tablespoons sugar
1/4 teaspoon baking powder
1 egg
3 tablespoons milk
3 tablespoons vegetable oil
3 tablespoons peanut butter (this part can be substituted for nutella for a nutella mug cake)
Mix together in a bowl and pour into an over sized coffee mug. Microwave on high for 2 minutes. After about a minute or so it will puff up and rise straight out of the cup, almost 2 inches up!
(It looks like it will overflow, but as long as you have an over-sized coffee mug, not a regular one it won't.
I learned this one the hard way. My pirate mug is extra tall, maybe 1/2 inch taller than a standard mug.)
And to finish, I spread a little nutella on top for an extra treat!

It is surprising that it came from a microwave.
This was a really bad thing to learn to do. Now I can make cake in under 10 minutes.
A fellow pinner (my mom) has informed me of another mug cake recipe (from Pinterest of course). It is even easier with fewer ingredients and it has less calories:
ReplyDelete"you can also make a lower calorie mug cake by mixing a box of angel food cake mix with a box of any other kind of cake mix. Pour the two into a tupperware container to store. When ready to make mug cake, measure out 3 tablespoons of cake mix(es) into a mug. Add 2 tablespoons of water, mix and microwave for 1 minute. Depending on the brand of other cake mix, calories are 90-100/mug cake."
I have to get out to the store today to get my hands on some boxes of cake mix!
Just tried this tonight, but instead of pb put in 2 T of coco powder. YUM!!! you totally rock
ReplyDeleteI'll have to try that! I bet cocoa powder has way less calories than peanut butter! Maybe I'll mix the two and make chocolate peanut butter cake tonight. Mmmmm.
DeleteOn a side note, this week I tried the angel food cake mix with regular chocolate cake mix recipe I mentioned above and it was very good. So easy too cause you mix the two in a tupperware bin and scoop out the mix as needed.
